My family loves baked oatmeal for breakfast and homemade granola just about anytime, so I will be headed to WalMart soon. At our house, I double the recipe for baked oatmeal and it will serve breakfast two times. We like to eat it with syrup, or fruit. For a real treat for my picky eater, I stir in about a 1/3 cup of peanut butter with the butter as I am melting it. Then I sprinlke half of the pan with chocolate chips!! YUM! I make this up the night before, and my husband just sticks it in the oven, uncovered 30 minutes before everyone gets up…what a sweetie
