A couple of week ago I had a Creamy Vegetable Soup on my menu and I wanted to share the recipe with everyone since it now looks and feels like soup weather.  If you have ever been to the Dixie Stampede in Branson, this is very similar to the soup that they serve.

Creamy Vegetable Soup

8 cups chicken broth

1 cup frozen peas (must be frozen)

1 can sweet whole kernel corn

1 can green beans

1 cup of grated carrots

1 tsp. garlic powder

1 tsp. onion powder

2 cups heavy whipping cream

1 cup milk

Fully cook all vegetables and then grind into small pieces.  I use a blender with some of the chicken stock.  I can leave small chunks of vegetables in mine since my kids love veggies, but if your kids won’t eat anything that’s green – blend good.   Bring broth, seasoning and vegetables to a boil and then add the whipping cream.  Add salt and pepper to taste.

My family loves baked oatmeal for breakfast and homemade granola just about anytime, so I will be headed to WalMart soon.  At our house, I double the recipe for baked oatmeal and it will serve breakfast two times.  We like to eat it with syrup, or fruit.  For a real treat for my picky eater, I stir in about a 1/3 cup of peanut butter with the butter as I am melting it.  Then I sprinlke half of the pan with chocolate chips!! YUM!  I make this up the night before, and my husband just sticks it in the oven, uncovered 30 minutes before everyone gets up…what a sweetie :)
